Chicken strip bowl with slaw

A balanced bowl with chicken strips, rice with a fresh slaw, wholesome and satisfying.

Ingredients:

  • 1 cup (250ml) rice, uncooked
  • 1 Tbsp (15ml) curry powder
  • Salt, to taste
  • 300g frozen crumbed chicken strips
  • 1 carrot, thin strips
  • 2 cups (500ml) cabbage, thinly sliced
  • ¼ cup (60ml) red onion, thinly sliced
  • 1 Tbsp (15ml) sugar
  • 1 Tbsp (15ml) oil
  • ½ cup (125ml) vinegar
  • ½ cup (125ml) mayonnaise
  • 1 Tbsp (15ml) lemon juice

Method:

  1. In a pot, cook rice along with curry powder and salt until al dente.
  2. Cook the frozen crumbed chicken strips according to the package instructions and set them aside.
  3. To make a light slaw, in a small bowl, combine carrot, cabbage, red onion, sugar, oil and vinegar. Gently toss and set aside.
  4. In a small bowl, mix the mayonnaise with lemon juice and drizzle it over the chicken and rice before serving.
