Chicken strip bowl with slaw

A balanced bowl with chicken strips, rice with a fresh slaw, wholesome and satisfying.
Ingredients:
- 1 cup (250ml) rice, uncooked
- 1 Tbsp (15ml) curry powder
- Salt, to taste
- 300g frozen crumbed chicken strips
- 1 carrot, thin strips
- 2 cups (500ml) cabbage, thinly sliced
- ¼ cup (60ml) red onion, thinly sliced
- 1 Tbsp (15ml) sugar
- 1 Tbsp (15ml) oil
- ½ cup (125ml) vinegar
- ½ cup (125ml) mayonnaise
- 1 Tbsp (15ml) lemon juice
Method:
- In a pot, cook rice along with curry powder and salt until al dente.
- Cook the frozen crumbed chicken strips according to the package instructions and set them aside.
- To make a light slaw, in a small bowl, combine carrot, cabbage, red onion, sugar, oil and vinegar. Gently toss and set aside.
- In a small bowl, mix the mayonnaise with lemon juice and drizzle it over the chicken and rice before serving.
