Chicken mayo stew

Who said mayonnaise belongs to sandwiches only, try this lekker stew!


  • 2 Tbsp (30 ml) oil
  • 8 chicken braai pack
  • 2 onions, sliced
  • 2 red chillies, sliced
  • 2 red peppers, chopped
  • 1 chicken stock cube
  • 2 cups (500ml) hot water
  • 4 garlic cloves, chopped
  • ⅓ cup (80 ml) mayonnaise
  • Handful coriander
  • Handful basil
  • Mashed potato, to serve


  1. Heat oil in a pan over medium heat. Brown chicken for 10 minutes and set aside.
  2. In the same pan, add onions, chilli, and peppers. Fry for 5 minutes until the onions are soft.
  3. Crumble stock into the water and pour into the pan. Simmer for 5 minutes.
  4. Blitz the sauce until smooth. Return to pan.
  5. Return the chicken to the sauce and simmer for 20 minutes.
  6. Add in the mayonnaise and stir until well blended. Set off the heat.
  7. Garnish with chopped coriander and basil.
  8. Serve with mashed potato.
