Nugget breakfast hash

Golden potatoes, crispy chicken nuggets, wilted spinach with a runn eggs for a hearty start to the day.

Ingredients:

  • 1 large potato, diced
  • 1 cup (250ml) spinach, chopped
  • 1⁄4 cup (60ml) onion, diced
  • 2 Tbsp (30lm) cooking oil
  • 100g frozen crumbed chicken nuggets
  • 2 eggs
  • salt and pepper, to taste

Method:

  1. In a large pan, add cooking oil and start browning the potatoes until golden on each side.
  2. Add chopped spinach and onion and cook until the potatoes are soft in the middle. Season with salt and pepper.
  3. Cook frozen crumbed chicken nuggets and set aside.
  4. On a plate, layer potatoes and spinach mix, and add nuggets on top.
  5. Finish with two sunny-side-up eggs and enjoy immediately.
