Nugget breakfast hash

Golden potatoes, crispy chicken nuggets, wilted spinach with a runn eggs for a hearty start to the day.
Ingredients:
- 1 large potato, diced
- 1 cup (250ml) spinach, chopped
- 1⁄4 cup (60ml) onion, diced
- 2 Tbsp (30lm) cooking oil
- 100g frozen crumbed chicken nuggets
- 2 eggs
- salt and pepper, to taste
Method:
- In a large pan, add cooking oil and start browning the potatoes until golden on each side.
- Add chopped spinach and onion and cook until the potatoes are soft in the middle. Season with salt and pepper.
- Cook frozen crumbed chicken nuggets and set aside.
- On a plate, layer potatoes and spinach mix, and add nuggets on top.
- Finish with two sunny-side-up eggs and enjoy immediately.
