Chicken with pea rice

This simple dish makes the perfect mid-week family meal.

Ingredients:

Rice:
  • 2 Tbsp (30ml) oil
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 1 cup (250ml) frozen peas
  • 2 cups (500ml) rice
  • 700ml chicken stock
  • 1 tsp (5ml) ground cumin
  • salt
Chicken:
  • 2 Tbsp (30ml) oil
  • 8 chicken drumsticks
  • 1 Tbsp (15ml) chicken spice
  • 1 cup (250ml) chicken stock

Method:

For the rice:
  • Heat oil in a saucepan over medium-high heat.
  • Add onion and garlic, cook until fragrant.
  • Add the rice and cook for 2 minutes. Pour in the stock and bring to a boil
  • Reduce the heat, cover with a lid, and cook for 10 minutes.
  • Stir in the cumin and peas. Set aside.
For the chicken:
  • Heat oil in a saucepan.
  • Add the chicken and sprinkle in the chicken spice.
  • Pour in the chicken stock and simmer for 15 minutes.
  • Serve the chicken with the rice and a red pepper and onion salsa.
