Sticky onion and green pepper chicken

Our take on Madiba’s favourite chicken recipe – the perfect way to get the family together and keep a legend alive.

Ingredients:

  • 1 chicken, cut up into pieces or 8-10 chicken pieces
  • 2 tsp (10ml) chicken spice
  • Pepper, to taste
  • 1 onion, cut into 8ths
  • 1 green pepper, cut into chunks
  • 1 tsp (5ml) crushed garlic
  • 1 ½ cups (375ml) chutney
  • 1 cup (250ml) mayonnaise
  • 2 Tbsp (30ml) curry powder
  • Juice of a lemon
  • 1 cup (250ml) water

Method:

  • Preheat the oven to 180℃.
  • Coat the chicken in chicken spice, and add a sprinkle of pepper.
  • Add the onion and green pepper.
  • Arrange in a single layer in a baking tray/oven to table dish.  Roast for 15 minutes.
  • While the chicken is cooking, mix the garlic, chutney, mayonnaise, curry powder and water together.
  • Pour the sauce over the chicken and place back into the oven at 160 ℃ for 30 minutes.
  • Serve with rice.
