Loaded vienna rolls

Juicy viennas tucked into soft rolls and topped with tomato relish or chakalaka for a flavour-packed street food bite.

Ingredients:

  • 8 hotdog rolls
  • 8 Goldi Chicken viennas
For the relish
  • 1 onion, chopped
  • 4 tomatoes
  • 2 Tbsp (30ml) paprika
  • 1 tsp (5ml) crushed garlic
  • 2 Tbsp (30ml) sugar
  • 1 tsp (5ml) vinegar
For the chakalaka
  • 1 onion
  • ½ red pepper
  • ½ yellow pepper
  • ½ green pepper
  • 1 tsp (5ml) ginger
  • 1 tsp (5ml) crushed garlic
  • 2 tsp (10ml) curry powder
  • 2 carrots, grated
  • 2 tomatoes, grated
  • 1 Tbsp (15ml) sugar
  • 1 tin baked beans
  • salt and pepper to taste

Method:

  1. For the relish: In a saucepan, heat oil and add onions. Cook until translucent.
  2. Add paprika and garlic. After a minute, add tomatoes, sugar, and vinegar. Simmer on low heat until the relish resembles a thick, glossy sauce.
 
  1. For the chakalaka: In a large pan, heat the oil and add the onions and peppers, cooking for a few minutes.
  2. Add ginger, garlic and curry powder, cook for one minute.
  3. Add grated carrots, tomatoes, and sugar, and cook until the carrots are softened.
  4. To the pan, add the baked beans and combine well. Remove from heat.
 
  1. Assemble: In a pan, gently fry Goldi Chicken viennas until golden on both sides.
  2. Cut the hot dog rolls in half, place the viennas inside the roll, and fill with relish or chakalaka.
  3. Added option, top with caramelised onions or fresh red onion.
