Chilli and herb chicken wings with braaied corn on the cob

Try serving this old braai favourite with herbed butter to upgrade your mielies.

Ingredients:

Chicken:

1 pack of chicken wings

salt and pepper

2 Tbsp (30ml) olive oil

2 cloves garlic, chopped

A handful of fresh herbs, chopped (thyme, coriander, and basil work well!)

2 red chilli, deseeded and chopped

2 Tbsp (30ml) butter

The juice of half a lemon

Mielies:

4 x mielies, husks removed

salt and pepper

¼ cup (60ml) melted butter

2 Tbsp (30ml) chopped fresh herbs

Method:

Chicken:

  • Season chicken wings generously with salt and pepper.
  • Toss wings together with olive oil, garlic, herbs, and chilli, then coat evenly.
  • Cook wings over medium coals for about 10-12 minutes or in a hot griddle pan until cooked through.
  • Melt the butter, add the lemon juice, and baste the wings generously with the mixture for the last 3 minutes of the remaining cooking time.

Mielies:

  • Season the mielies, brush with ½ the butter, and cook over medium coals or on a hot griddle pan for 15 minutes.
  • Combine the butter and herbs, and brush them over the mielies for the last 2 minutes, until golden and cooked through.
  • Serve the chicken wings with mielies, fresh herbs, and soft, buttery goodness.

Cook’s note: Wings can also be prepared in the oven for a fuss-free dinner or lunch!
