Chakalaka chicken burger bowl

A hearty chicken bowl layered with spicy chakalaka. An idea of a burger in salad form.
Ingredients:
- 2 frozen crumbed chicken burgers
- 1⁄2 cup (125ml) lettuce, shredded
- 1⁄4 cup (60ml) cucumber, sliced
- 1⁄2 cup (125ml) tomatoes, diced
- 1 large potato, diced
- 1 Tbsp (15ml) cooking oil
- 1⁄2 cup (125ml) chakalaka
- Salt and pepper to taste
- 1⁄4 cup (60ml) mayonnaise
- 1 Tbsp (15m) tomato sauce
- 1 Tbsp (15m) lemon juice
Method:
- Cook frozen crumbed chicken burgers according to package instructions and set aside.
- Roast the potatoes with salt, pepper and olive oil until golden and crispy.
- In a small bowl, add all the dressing ingredients and set aside.
- Assemble all the salad ingredients in a salad bowl, and lastly drizzle dressing over the salad and enjoy.
