Boost your immune system with nutritious chicken, potato and cabbage combined in a simple, yummy recipe.

Ingredients:

  • 2 Tbsp (30ml) oil
  • 4 quarter chickens
  • 2 tsp (10ml) chicken spice
  • 1 onion, chopped
  • 150g baby potatoes
  • ⅓ cabbage, shredded
  • 1 bay leaf
  • ⅔ cup (160ml) chicken stock
  • Salt and pepper
  • ½ cup(125ml) frozen peas

Method:

  •  Heat oil in a large pot and brown the chicken. Add the chicken spice and set aside.
  • Add onion to the same pot and cook until translucent. Add the potatoes and the cabbage. Cook, stirring until the vegetables are slightly charred.
  • Return the chicken to the pot. Add the bay leaf and the chicken stock, cover, and simmer for 15 minutes or until the chicken is cooked through.
  • Season with salt and pepper. Add the peas and stand for 10 minutes.
  • Serve with rice.
