Quarter chicken with potato and cabbage

Boost your immune system with nutritious chicken, potato and cabbage combined in a simple, yummy recipe.
Ingredients:
- 2 Tbsp (30ml) oil
- 4 quarter chickens
- 2 tsp (10ml) chicken spice
- 1 onion, chopped
- 150g baby potatoes
- ⅓ cabbage, shredded
- 1 bay leaf
- ⅔ cup (160ml) chicken stock
- Salt and pepper
- ½ cup(125ml) frozen peas
Method:
- Heat oil in a large pot and brown the chicken. Add the chicken spice and set aside.
- Add onion to the same pot and cook until translucent. Add the potatoes and the cabbage. Cook, stirring until the vegetables are slightly charred.
- Return the chicken to the pot. Add the bay leaf and the chicken stock, cover, and simmer for 15 minutes or until the chicken is cooked through.
- Season with salt and pepper. Add the peas and stand for 10 minutes.
- Serve with rice.
