Chilli and herb chicken wings with braaied corn on the cob

Try serving this old braai favourite with herbed butter to upgrade your mielies.

Ingredients:

Chicken:

1 pack of chicken wings

salt and pepper

30ml olive oil

2 cloves garlic, chopped

A handful of fresh herbs, chopped (thyme, coriander, and basil work well!)

2 red chilli, deseeded and chopped

30ml butter

The juice of half a lemon

Mielies:

4 x mielies, husks removed

salt and pepper

¼ cup melted butter

30ml chopped fresh herbs

Method:

Chicken:

  • Season your chicken wings generously with salt and pepper.
  • Toss wings together with olive oil, garlic, herbs, and chilli, then coat evenly.
  • Cook wings over medium coals for about 10-12 minutes or in a hot griddle pan until cooked through.

Mielies:

  • Melt butter, add lemon juice, and baste wings generously with the mixture for the last 3 minutes of remaining cooking time.
  • Season the mielies, brush with ½ the butter, and cook over medium coals or on a hot griddle pan for 15 minutes.
  • Combine butter and herbs and brush over mielies for the last 2 minutes until golden and cooked through.

Serve your chicken wings with mielies, fresh herbs, and yummy softened butter.

Cook’s note: Wings can also be prepared in the oven for a fuss-free dinner or lunch!
