Chicken with pea rice

This simple dish makes the perfect mid-week family meal.
Ingredients:
Rice:- 2 Tbsp (30ml) oil
- 1 onion, chopped
- 3 garlic cloves, chopped
- 1 cup (250ml) frozen peas
- 2 cups (500ml) rice
- 700ml chicken stock
- 1 tsp (5ml) ground cumin
- salt
- 2 Tbsp (30ml) oil
- 8 chicken drumsticks
- 1 Tbsp (15ml) chicken spice
- 1 cup (250ml) chicken stock
Method:
For the rice:- Heat oil in a saucepan over medium-high heat.
- Add onion and garlic, cook until fragrant.
- Add the rice and cook for 2 minutes. Pour in the stock and bring to a boil
- Reduce the heat, cover with a lid, and cook for 10 minutes.
- Stir in the cumin and peas. Set aside.
- Heat oil in a saucepan.
- Add the chicken and sprinkle in the chicken spice.
- Pour in the chicken stock and simmer for 15 minutes.
- Serve the chicken with the rice and a red pepper and onion salsa.
