Chicken strips with loaded fries

Crispy chicken strips with drenched and saucy slap chips, the ultimate weekend indulgence.

Ingredients:

  • 4-6 large potatoes
  • cooking oil, for frying chips
  • 500g frozen crumbed chicken strips
  • 2 tomatoes, finely diced
  • 1 onion, finely diced
  • 1⁄2 cup (125ml) cucumber, finely diced
  • 1 green chilli, thinly sliced
  • 1⁄4 cup (60ml) vinegar
  • 1 Tbsp (15ml) sugar
  • Salt, to taste

Method:

  1. Peel and cut potatoes into chunky strips to make slap chips. Heat a pot with cooking oil and cook until the chips are golden in colour and the potatoes are cooked inside.
  2. Cook frozen crumbed chicken strips according to packet instructions and set aside.
  3. In a small bowl, add tomatoes, onions, cucumber, chilli, vinegar, sugar and salt together.
  4. On a large serving platter, layer chips at the bottom, followed by chicken strips and salsa.
  5. Finish off with your preferred chips, sauce and pickles (optional).
