Chicken strips with loaded fries

Crispy chicken strips with drenched and saucy slap chips, the ultimate weekend indulgence.
Ingredients:
- 4-6 large potatoes
- cooking oil, for frying chips
- 500g frozen crumbed chicken strips
- 2 tomatoes, finely diced
- 1 onion, finely diced
- 1⁄2 cup (125ml) cucumber, finely diced
- 1 green chilli, thinly sliced
- 1⁄4 cup (60ml) vinegar
- 1 Tbsp (15ml) sugar
- Salt, to taste
Method:
- Peel and cut potatoes into chunky strips to make slap chips. Heat a pot with cooking oil and cook until the chips are golden in colour and the potatoes are cooked inside.
- Cook frozen crumbed chicken strips according to packet instructions and set aside.
- In a small bowl, add tomatoes, onions, cucumber, chilli, vinegar, sugar and salt together.
- On a large serving platter, layer chips at the bottom, followed by chicken strips and salsa.
- Finish off with your preferred chips, sauce and pickles (optional).
