Chicken strip pitas with basil mayo cucumber salsa

A chicken strip dinner the whole family will love.
Ingredients:
- 1 x pack frozen crumbed chicken strips
- ½ cup (125ml) mayonnaise
- 1 clove garlic, minced
- 30g fresh basil
- Salt and ground black pepper
- 1 packet (200g) diced bacon
- ½ cucumber, diced
- 1 red onion, finely chopped
- 2 Tbsp (30ml) chopped parsley
- 80g lettuce
- 4 pitas
Method:
- Preheat the oven to 180°C.
- Spread the chicken strips on an oven tray and bake in the oven for 25 minutes, or until golden and cooked through.
- Place the bacon bits in a pan, and allow them to cook slowly until the fat has rendered and the bits are crispy. Drain on a paper towel.
- Place the mayonnaise, garlic and basil in a blender. Blend until smooth and season to taste with salt and pepper.
- Mix the cucumber, red onion and parsley with a small pinch of pepper.
- Pop the pitas into the oven for 3 minutes, then cut them in half.
- Spread some of the basil mayonnaise on the inside of each pita. Add lettuce, followed by crispy chicken strips. Spoon in some of the cucumber mix and drizzle over more basil mayo. Sprinkle over the crispy bacon bits and serve.
