Chefs’ tips #26

Super soup toppers

Add a topper to add extra flavour and texture pizzazz to your soup. Here are five quick and simple ideas.

  1. Crunchy croutons
Toasted herb and garlic bread cubes add crunch and savoury flavour to chicken and vegetable soups, soaking up tastes while maintaining their delightful crunch.
  2. Avocado & lime
Diced avocado and a squeeze of fresh lime juice brighten creamy chicken soups. The creaminess of the avocado balances the broth, while the lime adds a refreshing zest.
  3. Fresh herbs
A sprinkle of fresh herbs, such as parsley, coriander, or basil, can elevate the freshness of any soup. Adding herbs just before serving enhances the aroma and provides a burst of flavour, especially in chicken noodle or minestrone.
  4. Spiced yoghurt drizzle
A dollop of yoghurt mixed with a touch of cumin, paprika, or harissa transforms a bowl of soup into a creamy, flavourful delight. This works wonderfully as a topper for rich chicken soups or lentil soups, adding both creaminess and a hint of spice.
  5. Nuts and seeds
Toasted sunflower seeds, pepitas (pumpkin seeds), or slivered almonds provide a satisfying crunch and nutty flavour. They also add protein and texture, perfect for garnishing a hearty chicken soup or a soothing butternut squash soup.
