Southern fried chicken strips with charred greens, rosa tomatoes and almonds served with ricotta

Get ready for a delicious and balanced meal with these irresistible Southern Fried Chicken Strips.

Ingredients:

  • 2 Tbsp (30ml) olive oil
  • 350g  green beans
  • 100g mange tout
  • 100g cherry tomatoes, halved
  • ½ cup (125ml)  slivered almonds,
  • 400g Earlybird Southern Style Crumbed Chicken Strips
  • 2 Tbsp (30ml) butter
  • 1 garlic clove, finely sliced
  • 2 anchovies
  • 2 Tbsp (30ml) lemon juice
  • To serve, ricotta

Method:

  1. Preheat the oven to 180 °C and cook the Southern Fried Chicken Strips from frozen for 15 minutes.
  2. Heat a frying pan to medium, add oil and char beans and mangetout for 5 minutes.
  3. Add tomatoes and a pinch of salt to the beans and cook for 3 minutes more, until the tomatoes start to soften and release their juices. Remove from the heat with all pan juices.
  4. Add butter to the pan along with garlic, anchovies and lemon juice. Keep swirling the butter mixture for about 1 - 2 minutes, and add a dash of water.
  5. Return greens and tomatoes to the pan, toss in the sauce, add chicken strips.
  6. Garnish with toasted flaked almonds and ricotta and serve.
