Chicken marinades for braai

Ingredients:

Citrus

  • 2 tbsp (30 ml) lemon juice
  • 2 tbsp (30 ml) orange juice
  • 2 tbsp (30 ml) oil
  • 1 sprig rosemary

Yoghurt

  • ⅓ cup (80 ml) double cream yoghurt
  • ¼ cup (60 ml) olive oil
  • 4 lemons, juiced
  • 4 garlic cloves, minced
  • 3 tbsp (45 ml) dry mixed spice
  • Salt and pepper

Paprika

  • 1 tbsp (15 ml) olive oil
  • 2 tbsp (30 ml) lemon juice
  • 1 tbsp (15 ml) paprika
  • 1 tsp (5 ml) onion powder
  • 2 garlic cloves
  • 1 lemon peel
  • Salt and pepper

Beer

  • 3 tbsp (45 ml) beer
  • 2 tbsp (30 ml) honey
  • 3 garlic cloves, minced
  • 1 green chilli
  • Salt and pepper

Method:

  • Mix all marinade ingredients together and marinade the chicken for 30 minutes or overnight before braaiing.
Tip: Don't reuse marinades used on raw chicken unless boiled first. Boiling destroys harmful bacteria.
