frying chicken

Chefs’ tip #5

Keep pan-fried chicken breasts juicy and tender

Dry, overcooked chicken breasts are enough to ruin an entire meal. Here’s how to keep them tender.

  • First sear or brown the breasts in a pan on the stove.
  • Remove the breasts from the pan and set aside while you cook the other ingredients. Once those are cooked, pop the breasts back into the pan for a few more minutes. This allows the breast to cook through without becoming dry, tough and overcooked.
  • You can use this technique when you’re making chicken stews and stir-fries too.
